Bandelier Trading Snack Bar and Grill offers visitors an authentic
taste of regional cuisine. Beans and corn were the earliest New
Mexico crops, grown by Native Americans, then dried and stored in
pottery jars. The Spanish brought the first chile plants when they
began settling in the area in 1598. Chile from local fields, both
red and green, adds its wonderful, rich spice to many of our dishes.
Don't be afraid to try it. It's delicious and not too hot. Both
our ingredients and recipes are local. These are the foods eaten
in Northern New Mexico every day. Our staff is happy to explain
the dishes and give advice on eating them (don't try to eat the
corn husks that wrap our tamales). We also serve great hamburgers
and hot dogs, hot and cold sandwiches, and flavorful healthy choices.
